Abstract
This study examines how specific dietary components and stress impact the development of obesity in mice fed a Western diet. Two experimental studies examined the impact of gluten, carrageenan, marine collagen peptides (Naticol), and stress on body weight, adipose tissue growth, inflammation, and gut microbial metabolism. Adipocyte morphology was quantified using Adiposoft, inflammatory markers were measured by RT-qPCR, and fecal and cecal volatile organic compounds (VOCs) were analyzed using SIFT-MS. Overall, this study identifies κ-carrageenan as a factor that exacerbates metabolic alterations under a Western diet and suggests that SIFT-MS VOC analysis could be a tool for exploring gut dysbiosis.
